High-Protein Vegan Meal Prep: A Week Above 25g Per Meal
A practical meal-prep system built from dishes that clear 25g of plant protein โ with the batch-cooking order, storage rules, and a ready-made weekly plan.

The hardest part of high-protein plant-based eating isn't the protein โ it's Wednesday. Anyone can cook a 30g-protein dinner once; the win is having five of them staged in the fridge when you're tired. This is the batch system we use, built entirely from dishes on our menu that hold up for days. (Vegetarians: everything here works for you as-is โ these dishes are plant-only, so they slot into any vegetarian week without substitutions.)
The math first
Target 25g+ per main meal. Our menu currently has 29 dishes at or above that line, and 65 dishes tagged meal-prep, make-ahead, or freezer-friendly. The intersection is your prep list.
The Sunday order of operations
- Oven first (45 min): two sheet pans โ cubed sweet potatoes/squash on one, marinated tofu or tempeh on the other. This is your protein anchor for three meals.
- Grains simmering in parallel: a big pot of brown rice or farro; quinoa if the week includes bowls.
- One pot of legumes: a soup, dal, or chili โ these get better by day three.
- Sauces in the blender last: peanut-lime, cashew crema, tahini-lemon. Sauces are what stop prep food from feeling like leftovers.
- Breakfast sets itself: overnight oats or baked oatmeal in jars while the oven runs.
Storage rules that matter
- Cooked grains and legumes: 4โ5 days refrigerated; both freeze cleanly in flat bags.
- Crisped tofu/tempeh stays crisp only if stored unsauced โ glaze at reheat time.
- Dress greens and slaws day-of; store dressings separately.
- Soups, stews, dal, and chili freeze for a month โ portion before freezing, not after.
