The Juice Bar

Cold-pressed juice is half the Rootful kitchen. These are the recipes we drink daily โ€” led by the Gerson classics โ€” plus a straight-talk guide to the machines that make them. All produce organic, always โ€” and no juice recipe uses any added sweetener: fruit and vegetables only.

The Gerson Green Juice

The Gerson Green Juice

~8 oz

The classic therapy green juice โ€” a full spectrum of leafy greens pressed with apple for balance. Best made on a two-step grind-and-press juicer.

Through the juicer

  • โ€ข Romaine lettuce, 3 leaves
  • โ€ข Swiss chard, 2 leaves
  • โ€ข Beet greens (tops), 2 leaves
  • โ€ข Watercress, small handful
  • โ€ข Red cabbage, 1/4 cup
  • โ€ข Green bell pepper, 1/4
  • โ€ข Escarole or endive, 2 leaves
  • โ€ข Green apple, 1 medium

Method

  1. Wash all greens thoroughly; keep them cold until juicing.
  2. Alternate greens with apple pieces through the juicer so the apple pushes the leaf pulp through.
  3. If using a press juicer, grind first, then press the pulp bag slowly to full pressure.
  4. Drink immediately โ€” green juice oxidizes fastest of all.

๐Ÿ’ก Gerson protocol calls for drinking within 20 minutes of pressing. If you must hold it, fill a glass jar to the very brim (zero air) and refrigerate up to 4 hours.

๐Ÿ”ฌ What the research says

  • In a prospective study of 960 older adults, roughly one daily serving of green leafy vegetables was associated with slower cognitive decline โ€” equivalent to being about 11 years younger in cognitive age. Morris et al., Neurology, 2018 โ†—
  • Dietary inorganic nitrate โ€” the compound beets are richest in โ€” lowered systolic blood pressure by an average of 4.4 mmHg across 16 randomized crossover trials. Siervo et al., The Journal of Nutrition, 2013 โ†—
Carrot Apple

Carrot Apple

~10 oz

The workhorse of the Gerson kitchen โ€” sweet, mineral-rich, and the easiest juice to love. Two ingredients, no excuses.

Through the juicer

  • โ€ข Carrots, 5โ€“6 medium (about 1 lb)
  • โ€ข Green apple, 1 large

Method

  1. Scrub carrots well โ€” no need to peel organic carrots.
  2. Quarter the apple; remove the seeds.
  3. Juice carrots and apple in alternating batches.
  4. Stir once and drink fresh.

๐Ÿ’ก On a hydraulic press this juice comes out noticeably sweeter and smoother than on a centrifugal machine โ€” pulp contact time matters.

๐Ÿ”ฌ What the research says

  • Drinking 16 oz of fresh carrot juice daily for three months significantly raised total plasma antioxidant capacity and reduced lipid peroxidation (a marker of oxidative stress) in adults. Potter et al., Nutrition Journal, 2011 โ†—
Pure Carrot Juice

Pure Carrot Juice

~8 oz

Single-ingredient carrot juice: beta-carotene in a glass. The Gerson protocol's other daily staple.

Through the juicer

  • โ€ข Carrots, 7โ€“8 medium (about 1.25 lb)

Method

  1. Scrub carrots; trim the ends.
  2. Feed steadily through the juicer.
  3. Drink fresh, ideally within 20 minutes.

๐Ÿ’ก Choose deep-orange juicing carrots by the 5 or 10 lb bag โ€” they're sweeter and far cheaper than bunch carrots.

Beet, Apple & Ginger

Beet, Apple & Ginger

~10 oz

Earthy beets brightened with apple and a real kick of ginger โ€” a circulation-boosting deep-red glass.

Through the juicer

  • โ€ข Red beet, 1 medium, scrubbed
  • โ€ข Green apples, 2
  • โ€ข Fresh ginger, 1-inch knob
  • โ€ข Lemon, 1/2, peeled

Method

  1. Cut the beet into wedges that fit your chute.
  2. Juice ginger and lemon first (they hide in the later pulp).
  3. Follow with beet and apple, alternating.
  4. Stir well โ€” beet juice settles.

๐Ÿ’ก Start with half a beet if you're new to beet juice; it's potent. Wear an apron you don't love.

  • โ€ข Oranges, 2, peeled
  • โ€ข Ruby grapefruit, 1/2, peeled
  • โ€ข Carrots, 2
  • โ€ข Fresh turmeric, 1/2-inch (or 1/4 tsp ground stirred in)

Method

  1. Peel citrus, keeping as much white pith as possible โ€” that's where the bioflavonoids live.
  2. Juice turmeric first, then carrots, then citrus.
  3. Add the pinch of black pepper (it multiplies curcumin absorption).
  4. Stir and serve.

๐Ÿ”ฌ What the research says

  • Vitamin C contributes to immune defense by supporting multiple cellular functions of both the innate and adaptive immune system, per a comprehensive review. Carr & Maggini, Nutrients, 2017 โ†—
  • Piperine from black pepper increased the bioavailability of curcumin (turmeric's active compound) by 2,000% in humans โ€” the reason our turmeric recipes always add a pinch of black pepper. Shoba et al., Planta Medica, 1998 โ†—
Green Glow

Green Glow

~12 oz

The everyday green: cucumber-based, spinach-heavy, apple-sweetened โ€” a gentler on-ramp than the full Gerson green.

  • โ€ข Cucumber, 1/2

Method

  1. Juice mint between pineapple pieces.
  2. Add lime and cucumber.
  3. Serve chilled; garnish with a mint tip.

Ruby Roots

~9 oz

Beet, carrot, and orange with a rosemary whisper โ€” sweet roots with a savory edge.

Through the juicer

  • โ€ข Red beet, 1 small
  • โ€ข Carrots, 3
  • โ€ข Orange, 1, peeled
  • โ€ข Rosemary, 1 short sprig (leaves only)

  1. Juice rosemary leaves first with a carrot.

  3. Stir before drinking โ€” roots settle fast.

๐Ÿ”ฌ What the research says

Watermelon Basil Press

  • โ€ข Basil, 6 leaves
  • โ€ข Lime, 1/2, peeled

Method

  1. Juice basil between watermelon cubes.

The Juicer Guide

A cold-pressed juice is only as good as the machine behind it. Three honest tiers โ€” from the therapy-grade hydraulic presses to the slow juicer we recommend most people actually start with.

Norwalk Model 290

The gold standard

Two-step: triturator grinder + hydraulic press

$2,500โ€“$3,000 (often found used)

  • โ–ธ The original Gerson Therapy juicer โ€” grinds produce to a paste, then presses it under a hydraulic ram for maximum extraction.
  • โ–ธ Highest yield and nutrient density of any home juicer; the pressed juice holds its enzymes longer than any other method.
  • โ–ธ No longer in production, so the used market (and the PURE Juicer below) is where to look.
  • โ–ธ Heavy, deliberate, and worth it if juicing is a daily therapeutic practice.

Best for: Serious daily juicing, Gerson protocol households

PURE Juicer

The modern Norwalk

Two-step: grinder + hydraulic press

~$2,395

  • โ–ธ Built by a team that set out to succeed the Norwalk โ€” all stainless steel, surgical-grade parts, and a full hydraulic pressing stage.
  • โ–ธ Approved for Gerson Therapy use; yields and juice quality test at or above the Norwalk.
  • โ–ธ In production today with real warranty and support, which the Norwalk can no longer offer.
  • โ–ธ Cleanup is a committed 10โ€“15 minutes โ€” this is an instrument, not an appliance.

Best for: Anyone buying the best juicer money currently buys, new

Best place to start

Hurom H-series (H400 / H320)

The everyday choice

Slow masticating (single auger)

$400โ€“$600

  • โ–ธ Cold-press-style slow auger at 43 RPM โ€” low heat, low oxidation, dramatically better juice than any centrifugal machine.
  • โ–ธ Handles the daily carrot-apple and green juices beautifully; yield on leafy greens trails a true press but beats everything else at this price.
  • โ–ธ Self-feeding hopper models (H400) cut prep time nearly in half.
  • โ–ธ Ten-year motor warranties are standard โ€” these machines last.

Best for: Starting a daily juice habit without the four-figure commitment

A note on the research: the studies cited on this page examine specific ingredients under specific conditions โ€” they are shared for education, not as medical claims about these recipes. Juice is a food, not a treatment. Talk to your doctor before using any juice program alongside a medical condition or medication, especially blood pressure or blood-thinning medication.
